Hot pot: The Sichuan speciality. It's basically social hour (or 4) over food and beer. Basically you order whatever kinds of vegetables, meats, internal organs, what have you, and then you cook it in a boiling hot pot of spicy oil. Sound dangerous? Oh it is. It's good- don't get me wrong. And if you're in Chengdu and you don't hot pot, you've missed the boat. I love it. I've even had goose colon. But I prefer the tofu and mushrooms. I will say this though- if you're going to do the hot pot; have the morning off.
